Pulp Pancakes
15 minutes · Makes 4–6 pancakes · Uses your leftover pulp
Weekend breakfast, closed loop: the milk in your coffee and the pancakes on your plate came from the same handful of oats.
Ingredients
- 1 cup oat pulp
- 1 ripe banana
- 4 tbsp flour
- 1 tsp baking powder
- A splash of your homemade milk
- Pinch of salt
Method
- Mash the banana, mix in the pulp, then the dry ingredients, loosening with milk until you get a thick batter.
- Fry in a hot, lightly oiled pan — 2–3 minutes per side.
- Stack. Maple syrup. Sunday.
