Stack of golden oat pancakes with maple syrup and blueberries

Pulp Pancakes

15 minutes · Makes 4–6 pancakes · Uses your leftover pulp

Weekend breakfast, closed loop: the milk in your coffee and the pancakes on your plate came from the same handful of oats.

Ingredients

  • 1 cup oat pulp
  • 1 ripe banana
  • 4 tbsp flour
  • 1 tsp baking powder
  • A splash of your homemade milk
  • Pinch of salt

Method

  1. Mash the banana, mix in the pulp, then the dry ingredients, loosening with milk until you get a thick batter.
  2. Fry in a hot, lightly oiled pan 2–3 minutes per side.
  3. Stack. Maple syrup. Sunday.

The Lattveo tip

The pulp adds fibre and keeps the pancakes moist nobody will guess they're built on “leftovers”. Blueberries pressed into the wet side before flipping is the pro move.
