Stack of golden oat pancakes with maple syrup and blueberries

Pulp Pancakes

15 minutes · Makes 4–6 pancakes · Uses your leftover pulp

Weekend breakfast, closed loop: the milk in your coffee and the pancakes on your plate came from the same handful of oats.

Ingredients

  • 1 cup oat pulp
  • 1 ripe banana
  • 4 tbsp flour
  • 1 tsp baking powder
  • A splash of your homemade milk
  • Pinch of salt

Method

  1. Mash the banana, mix in the pulp, then the dry ingredients, loosening with milk until you get a thick batter.
  2. Fry in a hot, lightly oiled pan — 2–3 minutes per side.
  3. Stack. Maple syrup. Sunday.

The Lattveo tip

The pulp adds fibre and keeps the pancakes moist — nobody will guess they're built on “leftovers”. Blueberries pressed into the wet side before flipping is the pro move.
