Chocolate energy balls rolled in coconut flakes

Pulp Energy Balls

15 minutes · Makes 8–10 balls · Uses your leftover pulp

The pulp left after making milk is fibre and protein — throwing it away is throwing away snacks. This is the zero-waste recipe every Lattveo owner ends up making weekly.

Ingredients

  • 1 cup almond or oat pulp (lightly squeezed)
  • 6 pitted dates
  • 2 tbsp cocoa powder
  • 2 tbsp nut butter
  • Coconut flakes, for rolling

Method

  1. Squeeze excess liquid from the pulp.
  2. Mash everything together into a thick dough (a fork does the job).
  3. Roll into balls, coat in coconut, chill 30 minutes.

The Lattveo tip

They keep a week in the fridge and freeze perfectly. One batch of almond milk = one litre of milk plus a week of snacks, from the same 100 g of almonds. That's the maths the carton can't do.
